Dessert Strawberries, Pineapple, Melon, Blackberries and Raspberries, add any fruit you fancy. Slow Cooker Pulled Pork
This was so easy and basically cooked itself. 7 hours on low in the slow cooker and then shredded with two forks. Made the sauce separately using passata, balsamic vinegar, chilli powder, mustard powder, an onion, worcester sauce and sweetener. Even the Momma Bear enjoyed it |

Snacks
Syn Free Scotch Eggs
Pork mince (5% fat) with grated onion and seasoning of your choice (I used sage), salt & pepper. You can use turkey mince as well. Hard boil eggs and when cool wrap each egg in the mixed up minced meat. Chill in the fridge for half an hour and then dip in beaten egg and roll in cous cous until covered. Place on a baking tray sprayed with frylight and also spray each scotch egg with frylight. Place in oven on gas mark 5 for approximately 25 minutes or until golden brown. Perfect for picnics |
Banana Blueberry Muffins (tweak)
2 mashed bananas mixed with 3 beaten eggs. Pour into silicon muffin moulds and add blueberries (also works well with raspberries). In the oven, gas mark 6 for about 30 minutes or until set and golden brown. |
